Every agave used to make the Puro Capón was planted in 2010
by the Jimenez Mendez family in the Hornos field
in Santiago Matatlán, Oaxaca.
This special, limited edition production yielded only 202 cases and is made exclusively from Espadín agave planted over 10 years ago. When the agaves sprouted quiotes they were truncated like a normal batch production; however, these Espadín agave, now called ‘capon’, were left in the field for more than one year before harvesting, creating another layer of flavor that is not found in our regular Espadín. The resulting mezcal is a pure and authentic expression of the Hornos field terroir that we call “PURO CAPÓN.”

Notes
This batch was produced by Maestro Octavio's youngest son, Octavio Jr 'Luyo' Jimenez Mendez. His cook was near perfection with a golden brown color and strong, sweet aromas. This paved the way for a great fermentations under great weather conditions and allowed for maximum yields. The patience and dedication for this batch stretched over 12 years.
Other Information
A mezcal recipe that is adored by Maestro Don Octavio, this mezcal has an herbaceous nose that is supported by a briny, slate flavor in the mid-palate that leads to a long finish of strong cooked agave and ancho chile.
