Fluke Ceviche


Giving a smoky touch to your ceviche.
INGREDIENTS
1 ½ parts El Buho
2 lbs fluke (or any white fleshed fish) cut into small slices
8 limes juiced
1 small red onion small dice
4 serrano chiles small dice
1 cup small diced plum tomato without seeds
1 cup small diced mango
2 cups chopped cilantro
½ minced scotch bonnet (opt)
DIRECTIONS
Mix slices of fish with the lime juice.Put fluke into medium bowl with lime juice refrigerate for 15 to 20 min. until the fish color changes to white.Drain off lime juice add remaining ingredients and season with salt and pepper.
